Here's another recipe for you. :) These muffins are plain, but oh so good!
Makes 12 muffins
Ingredients:
1 1/4 c. rice flour
1 Tbs. baking powder
1/3 c. sugar
1/2 tsp. salt
1 c. milk
1/3 c. oil
2 eggs
In medium bowl, stir together flour, baking powder, sugar, & salt.
In separate small bowl, mix milk, oil, and eggs. Add milk mixture to dry
ingredients, stir just until moistened. Spoon batter into greased
muffin tin and refrigerate 20 minutes. Bake at 400 for 20 to 25 minutes,
or until muffins are golden brown.
(You could also try using buttermilk instead of regular milk. It makes them more moist and yummy.)
